Cheesy Bacon Potatoes

2 potatoes per person
½ lb bacon
2 bags shredded cheddar cheese
In 12 inch oven, fry bacon about ½ way.
Slice potatoes and add to oven.
Salt lightly.
Place lid on oven with 24 coals underneath.
When pot has heated up, use 8 to 10 coals on the top.
Rotate every 15 minutes and check ingredients, make sure there is ¼ inch of water in bottom to prevent burning.
Add water if needed.
Cook until potatoes are soft, about 45 minutes.
When finished, cover ingredients with shredded cheese and continue cooking for a few minutes until cheese is melted.
Makes 6 servings.
Try adding onions and peppers to this dish for more great flavor.
