BBQ Cheddar Crusted Chicken

½ cup mayonnaise
¼ to ½ cup shredded Cheddar cheese
2 to 3 tbsp barbecue sauce
4 boneless, skinless chicken breast halves (about 1 ¼ lbs.)
Panko bread crumbs

Combine mayonnaise, cheese and barbecue sauce in medium bowl.
Lightly oil or spray 10 inch Dutch oven.
Arrange chicken in bottom of prepared Dutch oven.
Evenly top with mayonnaise mixture, then top with a generous sprinkling of bread crumbs.
Use 10 coals in a ring around the bottom and cover the top with 18 to 20 coals.
Bake at 400 degrees for 30 to 40 minutes or until chicken is cooked all the way through.
Depending on the size of your chicken pieces you may need to adjust the cooking time.
Makes 6 Servings.
